产生黄曲霉毒素的真菌曲霉广泛分布于自然界,严重污染人类和动物的食物供应,造成健康危害,甚至引起死亡。因此,黄曲霉毒素已成为当前食品安全领域的重点关注对象。本文简要介绍了黄曲霉毒素的分子结构、理化性质、代谢、对人体的危害与限量,重点阐述了几种较常见的致肝癌的信号通路及其分子生物学机制,为保护消费者健康提供理论依据。
Abstract:Aspergillus producing aflatoxins are widely distributed in nature and seriously pollute the food supply of human beings and animals,causing health hazards and even death. Therefore,aflatoxins has become the focus of attention in the current food safety field. This article briefly introduces the molecular structure,physicochemical properties,metabolism,and hazards and limitations of aflatoxins,and focuses on the more common signal pathways and their molecular biology mechanisms that cause liver cancer,providing the theoretical basis for protecting consumers' health.
